I'm feeling very pleased to have achieved my aim for today: using my veg up by batch cooking for the week and the freezer. A spinach and ricotta lasagna (with pinenuts, my favourite), and a big batch of courgette, potato and feta cakes.

I'm a vegetarian who enjoys eating out and cooking at home. Trying to be green, eco-friendly, fairtrade and organic but still have fun! I have veggie-box guilt, often ending up chucking out rotting carrots!
